Ever craved meatball curry? This is the perfect recipe for you. 

I really enjoy the leftovers the next day in a toasted sandwich. Just crumble the meatballs on a slice of bread and drizzle some of the sauce over. Top with another slice of bread and toast on the griddle with light olive oil to give it a nice golden crust.  Mmmmm, yummmy!

Meatballs:

1 lb Ground Meat (Beef or Lamb)

2 Tblsp Heavenly Burger Blend

4 Tblsp Cold Water

1 Tblsp Finely Chopped Onions

1 Tblsp Breadcrumbs

Salt as desired

Thoroughly mix in all of the rest of the ingredients to the ground meat.  

Shape into meatballs.

Brown meatballs in 2 Tblsp oil and set aside.  No need to completely cook at this point. It will finish cooking in the sauce later.

Sauce:

1/2 Cup Canned Crushed Tomatoes (or make your own by blending fresh tomatoes)

1 Cup Canned Tomato Puree

1/4 Cup Finely Chopped Onions

2 Tblsp Heavenly Burger Blend

1/4-1/2 Cup Hot Water

Salt as desired - This is a low sodium seasoning

Heat oil on medium heat.

Add onions and fry until light brown in color.  

Add Heavenly Burger Blend to onions, and cook for 30 seconds.

Add Crushed Tomatoes and Tomato Puree.

Braise for 3 minutes.

Put it together:

Add browned meatballs and cook, covered, for 5 minutes.  

If more sauce is needed, add 1/4 - 1/2 cup of hot water and allow to blend and boil for a few minutes to thicken.

Garnish with chopped cilantro if desired.

Serve:

This dish can be served with pasta, rice, bread, pita bread, or naan.  A cool salad on the side adds a nice balance.
